This breakdown relies heavily on an enzyme called diamine oxidase, or DAO, produced primarily in the gut. When DAO activity is reduced, histamine accumulates more easily and symptoms appear once a threshold is crossed.

Mast Cell Activation Syndrome

Why these conditions are so often missed
Part of the challenge is that symptoms of histamine intolerance and MCAS overlap heavily with other conditions, including anxiety, irritable bowel syndrome, chronic fatigue, and allergic conditions. There is also no single definitive laboratory test that confirms either diagnosis, which means assessment relies heavily on careful symptom pattern recognition and investigation of underlying contributing factors.

Underlying infections, mould exposure, and chronic inflammatory load can all contribute to mast cell dysregulation over time — and are frequently missed without functional investigation.
